HOT PEPPER PASTE – SUNCAHNG
Gochujang is a salty, sweet and spicy fermented condiment made from chili pepper powder, glutinous
rice, meju (fermented soybean) powder, yeotgireum (barley malt powder) and salt. It is traditionally
fermented on a raised stone platform called jangdokdae. The sweetness comes from cooked glutinous
rice starch, which is cultured with saccharitized enzymes during the fermentation process.
