It is obtained from cow milk. Sold in the form of large wheels and it is a soft cheese with a ripening
period of at least 12 months.
The quality can vary seasonally and by year, fully ripened ones are used as slice. The way of feeding
cows from which milk is obtained, the weather and the soil affect the quality and taste of the cheese
It is mainly used for sprinkling on pasta, salads and Carpaccio. One wheel weighs about 35-40 kg and
average 500 liters of milk is needed for this.
It is sold on average in pieces of 3 kg.
