SIRBONE – GIOVANNI COLOMBO
Pecorino Sirbone is an Italian cheese prepared from goat milk by cooking or compressing it without
cooking.
Most often it has a crust of dirty yellow color.
Pecorino, which is white, cream or straw yellow in color according to the ripening time, is
produced under different names and in different forms in all southern regions of Italy between
October and June. It is a special cheese used in pastas, sauces of some meat dishes, and cheese
plates. It is sold in 3.5 kg packages.
