
CIRCASSIA SOOTY CHEESE
It is a cheese that appeared as a result of long wars and migrations in the Caucasus. This cheese, which is dried for a long time in ovens and subjected to a much longer service life, is also known as ‘soldier cheese’ because it is the main ingredients that soldiers who go on an expedition take with them.
Circassian cheese produced from cow milk, after forming in baskets, is smoked cold with the wood of mulberry and acacia trees and its own unique aroma is formed. Its outer surface is covered with a hard crust, while the inner surface has a broken white color and a slight aroma. Since it is a low-salt cheese, it does not have a very long shelf life.
