HALLOUMI CHEESE

The Middle East, especially Egypt, is shown as the origin of this cheese, which has been produced in Cyprus for hundreds of years. In the original, it was made with raw sheep or goat milk, while today those made from cow milk is common. It is folded in half by placing fresh mint leaves between the cottage cheese that has been decanted and shaped, and pickled or consumed fresh in this way. It is often consumed in many countries, especially Cyprus, Turkey, and Greece. It is grated on the grill, as well as cooked in a frying pan, and then used in salads or for making meatballs.
