TALEGGIO – GIOVANNI COLOMBO
This cheese, which got its name from the first place of origin – Taleggio, is produced today in all of
Lombardy. It is prepared by compressing without cooking. It has a creamy structure of white or yellow
color. When touched with a finger, its soft tissue collapses inward. It has a thin and pink-colored crust.
The cheese has a strong aroma, but this aroma is partly sweet, with a fruity sharp taste. The cheese is
suitable for consumption with wine and used in the presentation of dishes, sauces, snacks.
